With a Cherry on Top!

For those who stopped by to visit my Garden Post 
last week, I promised that I'd share the 
recipe for these delicious treats.

 I tried something "new to me" in the sun garden this spring.

Fresh cherries are currently in abundance 
in the grocery stores here in Austin, and for me, are
the perfect healthy snack for these hot summer days.

 We keep a bowl of fresh cherries in the refrigerator,
and I find myself frequently popping one or two 
in my mouth throughout the day.

I read that a cup of raw cherries with the pits is
roughly 90 calories, and an excellent souce of fiber.

Vanilla Coconut Cherry Cupcakes
Now these are a different story!

I've no idea how many calories are in one of these tasty treats, 
but when you read the recipe you'll see that they aren't low cal.

Made with eight egg whites, the cake is light and fluffy,
and the cherry buttercream icing is as they say,
" The Cherry On Top!"

 Well worth the splurge!
Serve with a glass of ice cold lemonade,
and you have the perfect summer indulgence.


 I'm still enjoying the pretty blooms
from the sun garden.

And will continue to savor the fresh cherries
 as long as they are available.

The summer we married, my husband was in graduate school, and I was employed as a teacher. We took a portion of our savings that summer and purchased a sailboat. We christened our Catalina 22, “Hyacinths For The Soul” after Saadi’s poem. Our "Hyacinths" provided years of pleasure.

  1. To me, cherries are like peanuts...if you have one you have to have more! The cupcakes look absolutely delicious. I can imagine the egg whites would make them fluffy...but not as 'lite' as we wish! I really enjoyed seeing how you had your table arranged with the pretty cake plate and cool lemonade!

    Have a wonderful holiday. I have gads of company coming Saturday. I really hope my daughters take over for me!

  3. Total deliciousness, dear Sarah, loc]ve all your beautiful flowers and pretty vignettes. I was one of those who asked for the recipe but since the SP and I have decided to try the 5:2 diet plan (starting today) I don't think these gorgeous looking cupcakes will be appearing in our kitchen any time soon.

  5. Sarah, the gorgeous cupcakes have to be mouth watering with the first bite. I love using the MC cupcake cups, they make making cupcakes fun. Pretty vignette set on the patio....

    So happy that your blog posts are showing up once again on my blog's side line! We never know what all is going on with Blogger...
    LOVE cherries and they are very healthy, especially for me due to my gout attack on May 17. I've learned what to eat and what to avoid. Sweets and alcohol are an absolute no-no as they cause another flare up.
    But pure they are best! Don't know what the meaning is of a cup of raw cherries with the pits being 90 calories, roughly. Who would eat the pits?!
    Lovely photos and you have quite some lovely flowers from the garden too.

  15. I love fresh cherries. There is a bowl on the table and more in the fridge. They are in season such a short time that it's imperative to enjoy them while they are fresh. Those cupcakes look sensational! A real treat.

  22. This looks just divine! I'm a cherry fan. Here in Michigan it's sweet cherry season and I love those big black sweet cherries -- just as they are! I know I should do something creative with them but by the time I get done picking through the bag there isn't enough. This looks so delicious and your serving table so fresh and pretty.

  26. We love cherries at our house and usually end up eating several pounds a week while they are in season. My hubby can eat a pound in one setting! The season is so short, I try to enjoy them while they are available. Dianne
