Mystery Ingredient Club

It's our 4th meeting, and

decided to put a little spice in this round of fun.  

~ Chipotle ~

Chipotle comes from the word, chilpoctli

when means "smoked chili."

This unique flavor comes from smoke-dried jalapenos.

It's used in many Mexican dishes because the smoky flavor 

and heat of the peppers is perfect for Mexican food.

I live in Texas where 

hot, spicy Mexican food is a staple, 

and one of my favorite dishes is blackened fish tacos 

with spicy chipotle aioli.  The hot days of summer, I prefer

a lighter dish, so I've opted to share a fish taco salad.

  It's got the flavor without all the calories.

Layer your bowl with crisp salad 

greens topped with brown rice.

Next add a layer of salsa made with 

corn, black beans, red peppers, garlic, and onions.

Top that with blackened fish and chopped 

avocado with just a squeeze of lemon.

My twist on this recipe is to add

a drizzle of Chipotle Aioli.

 It gives it that extra kick 

and yummy flavor.

We can buy Chipotle Aioli locally,

but you can easily make your own.

The summer we married, my husband was in graduate school, and I was employed as a teacher. We took a portion of our savings that summer and purchased a sailboat. We christened our Catalina 22, “Hyacinths For The Soul” after Saadi’s poem. Our "Hyacinths" provided years of pleasure.

  7. I love fish tacos, Sarah, but having it in salad form is more to my liking. I eat a salad everyday and this would be perfect. I can see why the chipotle aioli would add the perfect kick!

  12. What a delicious recipe Sarah. I love Mexican food, as long as it’s not to hot and spicy. We tend to try for lighter fare here during our hot summer months and this sure fits the bill. Beautiful photography...........

  15. Guess it is good I don't live in TX! I would be very hungry if I had to eat Mexican food. :) I remember when my mom went to visit my sis in TX. She came home and complained about the cardboard things my sister served! Tacos! LOL I don't think I had one until about 15 years ago. I make the soft ones now, but Irish Tacos, no heat!

  20. Oh my goodness your dish looks delicious! Over lettuce is just perfect. Just looking at the thumbnails here makes me hungry. (You are right! Our first came early this year. Last year we were hosting a wedding at this time.) Hope you're beating the heat!

    The fish salad looks delicious, but I cannot eat very spicy food. Being a "naturalized Texan", not a native, I did not have any Mexican food until I was 22 years old. I used to joke that my stomach did not develop its steel lining from eating spicy TexMex food as a child. Your salad looks wonderful, and I may be able to have a modified version.

  38. Sarah, your flags are all so gorgeous done up in watercolor. I printed one of my Waterlogue out and framed it - it was amazing. I told people I had painted it and they believed me! I quickly told them the truth, but it is amazing how beautiful it is.
    Your taco bowl is a great idea for summer. How light and refreshing. We have had salads all week. I think I will add a blackened fish one and the chipotle aioli sounds amazing. Yes, the stores in Texas have wonderful products!! I fill my suitcase when I go to visit.
